The thinking here was a whole wheat healthy cookie that was easy to make.
1 1/4 cup whole wheat flour
1 tsp cardomon powder
mix
3 tbsp canola oil
mix will with fork until crumbly
1/4 cup honey
2 tbsp rose water [or plain water if rose water not available][would saffron help? or crushed pistachios?]
mix, then kneed until smooth, roll out with a rolling pin. on last fold over add finely chopped pistachio nuts thickness about 1/4 inch
Bake 400F 7-10 min

3 tbsp cocoa powder [Ghirardelli or Scharffen Berger pure cocoa powder, unsweetened]
2 tbsp raw sugar [or light brown]
1 tsp cloves
1 tsp cinnamon
mix well
3 tbsp canola oil
mix well with fork until crumbly
1/4-1/3 cup water
mix, then kneed until smooth, roll out with a rolling pin. on last fold over add finely chopped nuts [peanuts, pecans or almonds work well] thickness about 1/4 inch
Bake 400F 7-10 min
Either of the above goes well with tea or coffee.
